Soy Salmon Fiesta

Many of us do not get enough omega-3 fatty acids in our diet.  Certain fish like salmon, mackerel, halibut, lake trout, and albacore tuna are good sources of omega-3 fatty acids.  However, it can get boring simply eating your fish fried, baked, or broiled.  Sometimes, it is fun to spice things up a bit.  Our Revival Soy Salmon Fiesta is a great way to enjoy salmon or your favorite omega-3-rich fish.

Marinade Preparation

Ingredients:
  • 1 package frozen peas
  • 1/2 package frozen white corn
  • 1/2 can dark red kidney beans, drained
  • 1/4 cup light olive oil
  • 1/4 cup dill or sweet pickle cubes
  • 1 tsp sugar (or honey)
  • 1 package Italian dressing mix, dry
  • 2 scoops Revival Plain Unsweetened Soy Protein
Directions:

Mix the peas and corn in a colander to thaw slightly; do not cook; place in large bowl when thawed.  Combine all ingredients EXCEPT the Revival Plain Unsweetened Soy Protein and pour over the peas and corn.  Cover and marinate in the refrigerater 4 hours or overnight.  Add the Revival Plain Unsweetened Soy Protein after the mixture is fully marinated and while cooking the salmon.

Lime Pesto Soy Dressing Preparation

Ingredients:
  • 1/8 cup evaporated milk (or soymilk)
  • 2 scoops Revival Plain Unsweetened Soy Protein
  • 1 tbsp basil pesto
  • 1 tsp lime juice
  • dash of garlic salt
  • dash of Italian seasoning
Directions:

Mix all ingredients with a whisk.  Add additional milk if needed to thin the dressing.  Serve as a side dressing.

Salmon and Pasta Preparation

Ingredients:
  • 1 package Revival Soy Penne
  • 1 can (14 oz.) of pink (or chum) salmon, drained and de-boned
  • 2 tbsp butter (or margarine)
  • 1 tsp garlic salt
Directions:
  1. Cook Revival Soy Penne as directed.  Drain and rinse under cold water to stop the cooking.  Set aside.
  2. Melt butter in a large saucepan.  Cut salmon into 2-inch chunks and sprinkle with garlic salt.  Cook in butter for about 2 minutes on medium heat.
  3. Place the Revival Soy Penne into a 9″ x 12″ casserole dish.  Add the marinated vegetables.  Place salmon on top down the center.  Sprinkle with paprika or chili powder.
  4. Serve cold with pesto dressing or bake at 350 oF for 10-15 minutes and serve warm.
